The Best Black Bean Cucumber Salad

This black bean cucumber salad is fresh, crunchy, and tossed in a simple balsamic vinaigrette dressing. Perfect for meal prep, summer lunches, or as a plant-based side dish.

This black bean cucumber salad came together on one of those days when I wanted something cold, crunchy, and filling, but didn’t want to cook anything.

I already had a cucumber in the fridge, a can of black beans in the pantry, and some fresh basil sitting in my fridge waiting to spoil.

I threw it all together with a quick homemade balsamic vinaigrette dressing, and the result was one of the easiest salads I’ve made that still felt fresh and satisfying.

It’s the kind of recipe that works whether you’re eating lunch solo, serving it as a BBQ side, or meal-prepping for the week.

And the best part? It tastes even better after it sits in the fridge for a bit.

Why You’ll Want to Make This Black Bean Cucumber Salad

This is one of those salads that looks simple but hits all the right notes.

The black beans give it protein and a nice bite, while the cucumber and red bell pepper add crunch and freshness.

I added cherry tomatoes to bring in a little sweetness, and the red onion gives just enough edge without overpowering it.

But the real star is the dressing. Trust me.

It’s made with balsamic vinegar, olive oil, honey, Dijon mustard, garlic, salt, and pepper… super simple but has so much flavor.

It pulls everything together and gives the salad that slightly tangy, slightly sweet finish that keeps you going back for more. My husband has been obsessed with this homemade dressing.

But you can always purchase a similar balsamic dressing elsewhere. Just know that homemade is always best.

This cucumber black bean salad is also versatile.

You can eat it as-is, scoop it up with tortilla chips, or even toss it on greens or quinoa to make it more filling.

Ingredients For Cucumber Black Bean Salad

Here’s everything that goes into this black bean cucumber salad:

Black beans: One can, drained and rinsed. I like using low-sodium ones if I can.

Cucumber: I leave the peel on, but you can peel it if you want.

Cherry tomatoes: Adds sweetness and color.

Red onion: A little goes a long way here. Dice it finely so it blends in.

Red bell pepper: It adds a nice pop of flavor.

Fresh basil: I used thinly sliced basil instead of cilantro and loved how fresh it made the salad taste.

Avocado (optional): Adds creaminess if you’re feeling extra.

For the Balsamic Dressing:

  • Balsamic vinegar
  • Olive oil
  • Honey
  • Dijon mustard
  • Minced garlic
  • Salt and black pepper

It’s all pantry staples, but together they make magic.

How to Make Black Bean Cucumber Salad

Step 1: Chop your veggies

chopped salad ingredients in a bowl

Dice your cucumber, halve the cherry tomatoes, and finely chop the red onion and bell pepper. Rinse your black beans and set everything in a large mixing bowl.

Step 2: Make the dressing

In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, minced garlic, salt, and black pepper. Taste and adjust… I like mine slightly more tangy, so sometimes I add an extra splash of vinegar.

Step 3: Toss and chill

Pour the dressing over the salad and mix until everything is coated. Let it chill in the fridge for 15–30 minutes before serving to let the flavors blend.

If you’re adding avocado, wait until just before serving so it doesn’t get mushy.

Serving Suggestions

This black bean cucumber salad is super flexible. You can:

  • Serve it as a side with grilled chicken, salmon, or shrimp
  • Scoop it up with tortilla chips like a chunky salsa
  • Pile it onto greens or a cooked grain for a hearty lunch
  • Add crumbled feta or goat cheese if you want a little richness

It also travels really well, so it’s perfect for picnics, potlucks, or meal prep.

Storage Tips

Store leftovers in an airtight container in the fridge for up to 3 days.

If you’re planning to add avocado, keep it separate until you’re ready to eat.

The flavors get even better the next day, making it a great make-ahead option.

Whether you’re trying to eat more plant-based meals, clean out your fridge, or just want something easy and refreshing, this black bean cucumber salad deserves a spot in your rotation.

It’s simple, delicious, and endlessly customizable…exactly the kind of recipe I love having on hand.
