I’ve been obsessed with this creamy beef tortellini soup lately. My husband and I have been devouring it this season, especially now that it’s cold outside.
I make this soup or my go-to shrimp and clam chowder recipe whenever I want something warm, but still fresh and full of real flavor.
Last week, when I made it, instead of using canned tomatoes (which I usually use), I tossed in a handful of baby tomatoes and let them cook right in the pot.
They softened, released their juices, and created a naturally sweet base that made the whole soup taste so good. I knew I had to share the recipe with you guys!
If you love easy, comforting meals that still taste delicious, this creamy ground beef tortellini soup will become one of your go-to dinners.

Why You Will Love This Creamy Beef Tortellini Soup
This tortellini soup with ground beef has the perfect cozy season balance.
The fresh tomatoes enhance the broth, the heavy cream makes it smooth and creamy, and the beef gives it that deep, savory flavor that keeps you coming back for more.
The tortellini turns it into a full meal, and everything cooks in one pot, which makes it simple enough for busy weeknights.
It feels like comfort food, but still tastes fresh and homemade.
Ingredients For Creamy Beef Tortellini Soup
Ground beef: Italian sausage works too if you want extra spice.
Olive oil or butter: To soften the aromatics and add richness.

Onion
Garlic: I suggest fresh garlic for the best flavor.
Cherry tomatoes: They burst in the pot, creating a naturally sweet, bright broth without canned tomatoes.
Carrots
Celery
Italian seasoning
Paprika
Dried basil: It enhances the tomato flavor and makes the soup smell amazing.
Red pepper flakes: Optional, but great for gentle heat.
Tomato paste: Optional but recommended. It deepens the broth and gives the soup a richer color.
Beef broth: You can substitute with chicken broth, but beef has a richer flavor.
Water: Helps adjust the broth to the perfect consistency.
Bay leaf: Optional, but adds depth.
Cheese tortellini: The star ingredient that makes the soup filling and satisfying.
Heavy cream or half and half: Makes the broth creamy and silky.
Cornstarch slurry: Thickens the soup and gives it a velvety texture.
Spinach or kale: Adds color, freshness, and a boost of nutrition.
Salt, maggi cubes, and black pepper: Season to taste. The maggi adds a cozy depth I love.. Please don’t skip it.
Parmesan and fresh basil: For serving. They brighten and lift the whole bowl.
Brown Sugar: Optional. But if you like your tortellini with a hint of sweetness, this will do it.

How To Make Creamy Ground Beef Tortellini Soup
Step 1: Brown the beef

Heat butter in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
Step 2: Sauté the aromatics

Add the onion, garlic, carrots, and celery. Cook for about 5 to 6 minutes until they soften and become fragrant.
Step 3: Add the tomatoes and seasoning

Stir in the baby tomatoes, Italian seasoning, dried basil, paprika, Maggi, and red pepper flakes. Cook for 5 to 7 minutes until the tomatoes burst and release their juices.
Step 4: Build the broth

Add the tomato paste and cook for one minute. Pour in the beef broth and water, then add the bay leaf. Bring the soup to a gentle boil, then lower the heat and let it simmer for 10 to 15 minutes.
Step 5: Cook the tortellini

Add the cheese tortellini and cook according to the package instructions, usually 5 to 7 minutes.
Step 6: Thicken the soup

In a small bowl, mix the cornstarch and cold water until smooth. Stir the slurry into the soup and let it simmer for 1 to 2 minutes until slightly thickened.
Step 7: Finish with cream and spinach

Reduce the heat. Stir in the heavy cream and spinach or kale. Let it warm through until the greens wilt and the broth turns silky.
Step 8: Taste and serve your beef tortellini soup

Season with salt, brown sugar (if you want a hint of sweetness; optional), and black pepper. Remove the bay leaf. Serve with parmesan and fresh basil.
Variations
There are so many delicious ways to personalize this soup.
Swap the ground beef for Italian sausage if you want extra richness and spice.
Stir in a spoon of beef bouillon paste for a deeper, bolder broth.
Add cream cheese or mascarpone for a thicker, creamier soup.
Kale works beautifully in place of spinach, and mushrooms add a lovely umami flavor.
A splash of white wine while sautéing the aromatics adds more ‘oomph’ to the dish. You can make this recipe as cozy, creamy, or hearty as you want.

Serving Ideas For Your Beef and Tortellini Soup
This creamy beef tortellini soup makes the perfect dinner on its own, but a few simple sides make it even better.
I love serving it with warm, crusty bread or garlic knots so you can scoop up every bit of the broth.
It is an easy meal that feels complete and comforting with very little effort.

How To Store Your Ground Beef and Tortellini Soup
This soup thickens as it sits because of the tortellini and cornstarch, so do not worry if it looks a bit thicker the next day.
In the fridge:
Let the soup cool completely, then store it in an airtight container for up to 3 days.
To reheat:
Warm gently on the stovetop over low to medium heat. Add a splash of broth, water, or cream to smooth it out.
In the freezer:
For the best texture, freeze the soup before adding the tortellini and cream.
When you are ready to serve, reheat the base, add fresh tortellini and cream, and cook until everything is hot and tender.

Made this today and it is hearty and flavorful. I added can of petite cut tomatoes along with the grape tomatoes just to add more flavor and liquid. Used tri color cheese tortellini. I added 2 oz cream cheese. Will make again.
Hi, just made this soup, and it’s delicious! Only issue, there’s no instruction on when to use the butter/olive oil. Still turned out great!
