Why You’ll Love This Matcha Chia Pudding

Not gonna lie, I wasn’t always a matcha fan. But this recipe definitely made me a matcha lover.

Matcha isn’t just delicious, it’s also rich in antioxidants, boosts energy without the crash of coffee, and adds a beautiful, earthy flavor.

Some people say that earthy flavor tastes like grass, but I beg to differ.

Just pair it with fiber-packed chia seeds, and you’ve got a delicious and nutritious snack or breakfast.

What makes this recipe even more appealing is its versatility.

You can top it with fresh blueberries (like I did), banana slices, coconut flakes, granola, or even a drizzle of almond butter.

It’s naturally gluten-free and can easily be made vegan by using plant-based milk and maple syrup.

Ingredients for Matcha Chia Pudding

Milk of choice: Almond, oat, coconut, or dairy.. Use whatever you love.

Chia seeds: These give the pudding its thick, tapioca-like texture while adding fiber and healthy fats.

Matcha powder: Use a good-quality matcha for the best flavor and vibrant green color. Sift it first to avoid clumps.

Honey or maple syrup: Just a touch of natural sweetness.

Monk fruit: I added this for that low-calorie extra sweetness. I prefer to use organic monk fruit powder to add a pure, natural sweetness.

Vanilla extract (optional): Adds a soft, sweet aroma.

Pinch of salt (optional): Enhances the flavors. But feel free to skip.

Toppings: Fresh fruit, granola, coconut flakes, or a drizzle of nut butter for extra texture and flavor.

How to Make Matcha Chia Pudding

Step 1: Whisk the matcha

whisking the matcha in a bowl

Sift the matcha powder with the monk fruit into a small bowl, then add a few tablespoons of warm water. Whisk until smooth and lump-free so it blends easily into the milk.

Step 2: Mix everything together

In a jar or bowl, combine the milk, whisked matcha, honey or maple syrup, vanilla, and a pinch of salt. Stir well until everything is fully combined.

Step 3: Add chia seeds

Stir in the chia seeds, making sure they’re evenly distributed. Let it sit for about 5 minutes, then stir again to break up any clumps that may have formed.

Step 4: Chill

Cover the jar or bowl and refrigerate for at least 2 hours, or overnight, until the chia seeds absorb the liquid and thicken into a pudding-like texture.

Step 5: Serve

Variations to Try

  • Coconut Matcha Chia Pudding: Use coconut milk for a creamier texture.
  • High-Protein Version: Add a scoop of vanilla protein powder or mix in some Greek yogurt before chilling.
  • Layered Parfait: Alternate layers of matcha chia pudding with plain chia pudding, similar to my Papaya and Yogurt Parfait recipe, for a pretty two-tone effect.

Ingredients

  • 1 ½ cups milk - almond, oat, coconut, or dairy
  • 3 tbsps chia seeds
  • 1 tsp matcha powder - ceremonial or culinary grade
  • ½ tsp monkfruit - organic monkfruit extract powder, optional, for more sweetness
  • 1-2 tsp honey - or maple syrup (adjust to taste)
  • ½ tsp vanilla extract - optional
  • salt - a pinch, optional, but enhances flavor

For topping:

  • Fresh fruit - berries, banana slices, mango
  • Coconut flakes - granola, or nuts
  • Extra drizzle of honey or nut butter

Instructions

  • In a small bowl, sift the matcha powder to remove clumps. Add 3–4 tablespoons of hot water and ½ tsp organic monkfruit (optional). Whisk until smooth and lump-free (a bamboo whisk works great, but a small regular whisk or frother also works).
  • In a medium jar or bowl, combine the milk, whisked matcha, sweetener, vanilla, and a pinch of salt. Stir until fully combined.
  • Stir in the chia seeds, making sure they’re evenly distributed. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours, or overnight. The chia seeds will absorb the liquid and form a pudding-like texture.
  • Give it a good stir before serving. Top with your favorite fruits, coconut flakes, or granola for extra texture and flavor.

Notes

If you prefer a smoother pudding, you can blend the mixture before chilling. This makes it extra creamy without the tapioca-like texture.
