Why You’ll Love This Miso Sesame Chicken Bowl
Bowls are one of my favorite dinners to throw together, and this one checks all the boxes:
- Big flavor: The chicken gets marinated in a sesame miso dressing, which keeps it juicy and packed with umami.
- Colorful & nutritious: Between the onions, bell peppers, and broccoli, you’re getting plenty of veggies in one dish.
- Quick to cook: Once your chicken is marinated, everything comes together in about 15 minutes.
- Meal prep-friendly: You can prep the components ahead of time and assemble the bowls during the week.
- Customizable: Change up the base (rice, noodles, quinoa) or swap the veggies for what you already have.
Ingredients for a Sesame Miso Chicken Bowl
Chicken breast: Perfect for soaking up the marinade. You can also use chicken thighs. Just make sure you cut them into bite-sized pieces.
Miso sesame dressing: This doubles as a marinade for the chicken and a sauce for the stir fry. Be careful not to use it all in the marinade. Save some for the stir-fry
Onion: Adds sweetness as it cooks and complements the vegetables.
Red and yellow bell peppers: Alternatively, you can use green or orange bell peppers.
Broccoli: Adds crunch and balances the sauce. Feel free to substitute with cauliflower florets.
Quinoa: Alternatively, you can use white rice, brown rice, or even cauliflower rice to create the perfect base for building your bowl.
Optional toppings: Sesame seeds, sliced green onions, or a squeeze of lime to finish.
How to Make a Miso Sesame Chicken Bowl
You don’t need a complicated process to make something delicious. This recipe keeps it simple but still delivers big on flavor.
Step 1: Marinate the chicken

Cut chicken breasts into thin strips and toss with miso sesame dressing. Let it sit for at least 30 minutes in the fridge so the flavors can soak in.
Step 2: Cook the chicken

Heat oil in a large skillet or wok. Add the marinated chicken and cook until browned and fully cooked through, about 4–5 minutes. Set aside.
Step 3: Stir-fry the veggies and combine everything

In the same pan, cook onion, bell peppers, and broccoli for 3–4 minutes until tender-crisp. Add a pinch of salt and pepper.
Return the chicken to the pan with the veggies. Drizzle in more miso sesame dressing and toss until everything is coated and glossy.

Step 4: Build your sesame miso chicken bowl

Scoop rice or grains into bowls, top with the sesame miso chicken and veggies, then garnish with sesame seeds or green onions.
Variations to Try
The beauty of a sesame miso chicken bowl is how easy it is to adapt:
Switch the base: Try soba noodles, cauliflower rice, or farro instead of rice or quinoa.
Change the veggies: Zucchini, snap peas, or carrots would also be delicious here.
Add heat: Mix a little sriracha or red chili flakes into the miso sesame dressing.
Make it creamy: Stir a spoonful of tahini into the sauce for a thicker, creamier bowl.
Extra protein: Add a soft-boiled egg or some edamame to make it more filling.
Meal Prep Tips
This recipe is perfect for meal prep because the components keep well:
- Chicken: Marinate overnight so it’s ready to cook the next day.
- Veggies: Chop in advance and store in containers.
- Rice or grains: Cook a big batch at the beginning of the week.
When you’re ready, just reheat the chicken and veggies, scoop over rice, and drizzle with extra sesame miso sauce.
