This shrimp and sweet potato bowl is a quick and flavorful meal made with roasted sweet potatoes, seasoned shrimp, and fresh toppings. Perfect for lunch, dinner, or meal prep.

If you need a quick meal that still feels like a real, put-together dinner, this shrimp and sweet potato bowl is one of those recipes I always go back to.

It’s simple, but it hits everything.

You’ve got roasted sweet potatoes that are slightly crispy on the outside and soft inside, seasoned shrimp that cook in minutes, and toppings that make the whole bowl feel balanced.

I love this shrimp sweet potato bowl because it doesn’t require anything complicated.

It’s just real ingredients, cooked in a way that actually makes them taste good.

And once everything is done, you just build your bowl and eat.

It’s one of those meals that works for lunch, dinner, or even meal prep without getting boring.

Why You’ll Love This Shrimp and Sweet Potato Bowl

  1. It’s quick and easy. You can have this shrimp sweet potato bowl ready in about 30 minutes.
  2. It’s filling without being heavy. The sweet potatoes and rice make it satisfying, but it still feels fresh.
  3. The flavors are simple but good. Nothing complicated, just seasoning that works.
  4. It’s customizable. You can switch up the toppings or add a sauce depending on your mood.
  5. It works for meal prep. Everything stores well and reheats easily.

Before we get into the ingredients, this is one of those bowls where the texture really matters.

You want the sweet potatoes slightly crispy, the shrimp tender, and then the fresh toppings to balance everything out.

Ingredients for a Shrimp and Sweet Potato Bowl

Sweet potato: One large sweet potato, peeled and diced into small cubes so it roasts evenly.

Shrimp: Peeled, deveined shrimp with the tails removed. Fresh or frozen both work, just thaw before cooking.

Olive oil: Used for both the sweet potatoes and shrimp.

Seasonings: I used paprika, garlic powder, salt, and black pepper.

Rice or quinoa: White rice works great, but brown rice or quinoa can be used instead.

Tomato: One small diced tomato, or you can use cherry tomatoes.

Onion: Chopped onion for a little crunch and bite.

Cilantro: Chopped fresh cilantro.

Lemon or lime juice (optional): Adds a fresh finish at the end.

How to Make a Sweet Potato and Shrimp Bowl

Step 1: Roast the sweet potatoes

Step 1_ Roast the sweet potatoes

Preheat your oven to 400°F.

Add the diced sweet potatoes to a baking sheet and toss them with olive oil and your seasonings.

Spread them out in a single layer so they roast properly.

Bake for 20 to 25 minutes, flipping halfway through, until they’re tender and slightly crispy.

Step 2: Cook the shrimp

Step 2_ Cook the shrimp

While the sweet potatoes are in the oven, season your shrimp with olive oil and the same seasonings.

Heat a skillet over medium heat and cook the shrimp for about 2 to 3 minutes per side until they turn pink and are fully cooked.

Step 3: Build the shrimp and sweet potato bowl and add toppings

Add rice or quinoa to your bowl.

Top with the roasted sweet potatoes and cooked shrimp.

Add your diced tomato, chopped onion, and cilantro.

If you have lemon or lime, squeeze a little over the bowl right before serving.

Tips to Make This Shrimp Sweet Potato Bowl Taste Even Better

Cut the sweet potatoes into similar sized pieces so they cook evenly.

Don’t overcrowd the pan when roasting or the sweet potatoes will steam instead of getting slightly crispy.

Cook the shrimp just until done so they stay tender and not rubbery.

If you want to take it up a level, add a sauce. Yum yum sauce, garlic yogurt sauce, or even a drizzle of hot honey works really well with this bowl.

This shrimp sweet potato bowl is one of those meals that’s easy to make but still feels like you actually cooked something good.

It’s simple, balanced, and something you can come back to anytime you don’t know what to make.
