There’s something about a dish that lets the rice and chicken cook together in the same pan.
The ingredients melt into one another, the seasonings seep into every bite, and you’re left with something that tastes like heaven but has a hint of heat to keep things exciting.
That’s exactly why I love making this one-pan spicy rice and chicken thighs recipe.
It’s delicious, filling, and so easy to pull together on nights when I want a lot of flavor without a sink full of dishes.
It’s also very similar to my one-pan ground sausage dirty rice.
Why You’ll Love This Spicy Rice and Chicken Thighs Recipe
This recipe is one of those one-pan wonders that feels like more than the effort it takes.
I seasoned the chicken with a mix of mild, bold, and slightly sweet spices, thanks to the addition of brown sugar.
The rice cooks directly under the chicken, soaking up all the juices so every spoonful is layered with flavor.
And let’s be honest, anything that tastes this good but only uses one pan is already a win in my book.

Ingredients For Spicy Rice and Chicken Thighs
Chicken pieces: I love using thighs or drumsticks here because they stay juicy and tender, but you can use any cut you like.
Ground ginger: Adds warmth and a little ting to the chicken seasoning.
Black pepper: To taste.
Salt: To taste.
Curry powder: This is optional, but I love to add curry for an extra flavor boost.
Paprika
Chili powder: Turns the heat up just enough to keep it interesting.
Dried thyme: You can substitute it with dried basil.
Brown sugar: Rounds out the spices and adds a touch of sweetness.
Rice: I prefer using basmati or jasmine rice, which cooks up fluffy and soaks up the sauce.
Onion, garlic, and peppers: The base aromatics that make the rice so flavorful.
Tomatoes and tomato paste: They give the rice body, richness, and a little tang.
Scotch bonnet or habanero chili: Totally optional, but perfect if you like it extra spicy.
Maggi stock cubes: I love Maggi; however, you can substitute it with any stock cubes you have on hand.
Oil: Helps brown the chicken and sauté the aromatics.
Chicken stock: To cook the rice. You can substitute with beef stock if you prefer.

How to Make Spicy Rice with Chicken Thighs
Step 1: Season and brown the chicken

Rub the chicken with a mixture of ground ginger, black pepper, salt, curry powder, paprika, chili powder, thyme, and brown sugar. For the best flavor, I suggest marinating your meat overnight.
Heat oil in a large pan on medium-high heat and sear the chicken on both sides until golden brown. This locks in flavor and gives the skin a nice crust. Remove and set aside.
Step 2: Build the curry base

In the same pan, sauté onion, garlic, and scotch bonnet pepper until fragrant. Add bell peppers, tomatoes, and tomato paste, then cook until everything reduces into a thick, spiced base.
This will form the foundation for the rice.
Step 3: Add the rice and seasoning

Stir the rinsed rice into the curry base until every grain is coated. Crumble in the Maggi cubes and pour in hot stock or water.
Taste the liquid and adjust seasoning as needed before adding the chicken back in.
Step 4: Return the chicken

Nestle the chicken pieces into the rice, skin-side up.
Cover the pan and cook on low heat for 25 to 30 minutes, allowing the rice to steam while the chicken juices infuse into it.
For an oven option, bake at 375°F for the same amount of time.
Step 5: Rest and serve

Once the rice is fluffy and the chicken is fully cooked, turn off the heat and let the dish sit covered for about 10 minutes.
This resting period allows the rice to finish steaming. Fluff gently with a fork and serve hot.
Variations
I usually make this with chicken thighs, but drumsticks are just as delicious.
If I want something lighter, boneless chicken works just as well.
I just add it halfway through, so it doesn’t dry out.
For a creamier version, add a splash of coconut milk to the stock, which makes the rice silky and rich.
And when I’m cooking for people who don’t like too much heat, I tone down the scotch bonnet and use a mild curry powder instead.

Serving Suggestions
This dish is good enough on its own, but I love pairing it with fried plantains for that sweet contrast.
Sometimes I serve it alongside a fresh salad to balance the richness, or I keep it simple with a wedge of lime for brightness. Either way, it always feels like a complete meal that doesn’t need much else.
Expert Tips & Storage
The key to perfect rice in this dish is rinsing it well before cooking.
That extra step removes starch and keeps the grains from sticking together.
Letting the dish rest covered after cooking also makes a big difference… the rice finishes steaming and turns out extra fluffy.
If you’re lucky enough to have leftovers, they store nicely in the fridge for up to three days.
I reheat mine on the stove with just a splash of water to loosen the rice.
For longer storage, I freeze it in portions and reheat gently when I’m ready.
It’s one of those meals that tastes just as good the next day, which makes it perfect for meal prep.
