Sweet potatoes are one of those ingredients that make baked goods naturally soft and delicious without needing a lot of extra work.
That’s exactly why I love these sweet potato muffins.
They’re tender, lightly spiced, and just sweet enough to feel like a treat without being overly sugary.
The mashed sweet potato keeps the muffins moist while also adding a little touch that pairs perfectly with cinnamon.
These muffins are the kind of thing you can grab in the morning with coffee, pack as a snack during the day, or enjoy as a simple dessert after dinner.
And the batter comes together quickly with ingredients you probably already have in your kitchen.

Why You’ll Love These Sweet Potato Muffins
- They’re incredibly moist. The mashed sweet potato keeps the muffins soft and tender without needing butter.
- They’re easy to make. The batter comes together in one bowl with simple ingredients.
- The flavor is warm and cozy. Cinnamon and optional nutmeg give these muffins that classic fall baking flavor.
- They’re great for breakfast or snacks. These sweet potato muffins are filling without feeling too heavy.
- They’re versatile. You can add nuts for texture or keep them simple and soft.
Before we get into the ingredients, one of the best things about this recipe is how forgiving it is. As long as your sweet potato is mashed well, the batter comes together easily and bakes into soft, fluffy muffins every time.
Ingredients for Sweet Potato Muffins
Mashed sweet potato: It adds a natural sweetness, and a soft texture to the muffins… but we will still use sugar to amp up the sweetness.

Eggs: To bind the batter together and give the muffins structure.
Granulated sugar: Sugar adds more sweetness and helps the muffins develop a soft crumb.
Maple syrup: I know we used sugar already, but adding maple syrup adds extra sweetness and a nice flavor that pairs beautifully with the sweet potato.
Vegetable oil: Keeps the muffins tender and moist.
Vanilla extract: Vanilla enhances the flavor and complements the spices.
All purpose flour: Forms the base of the muffin batter.
Baking powder: It helps the muffins rise and stay light.
Baking soda: It gives the muffins a soft texture.
Cinnamon: Cinnamon adds more flavor.
Salt: This is optional, but sometimes I add it to balance the sweetness.
Nutmeg (optional): Nutmeg adds a deeper spice flavor that pairs well with cinnamon. I don’t always use it, but feel free to give it a shot.
Chopped pecans or walnuts (optional): Nuts add a little crunch and texture to the muffins. You can also add chocolate chips, but that can overpower the taste of the sweet potatoes.

How to Make Sweet Potato Muffins
If you don’t already have mashed sweet potato ready, here’s a quick way to make it.
How to Mash the Sweet Potato
Peel one medium sweet potato.
Cut it into small cubes so it cooks faster.
Add the cubes to a pot with water and bring it to a boil. Let the sweet potato cook for about 10 to 12 minutes, or until it becomes fork-tender.
Drain the water and transfer the sweet potato to a bowl.
Mash it using a fork or potato masher until smooth.
For this recipe, measure 1 cup mashed sweet potato once it’s fully mashed.
Step 1: Mix the wet ingredients

Preheat your oven to 350°F and line a muffin pan with paper liners or lightly grease the pan.
In a large bowl, whisk together the mashed sweet potato, eggs, sugar, maple syrup, vegetable oil, and vanilla extract until smooth.
Step 2: Add the dry ingredients

Add the flour, baking powder, baking soda, cinnamon, nutmeg, and salt to the bowl.
Stir gently until just combined. Try not to overmix the batter, as that can make the muffins dense.
Step 3: Fill the muffin pan and Bake

Divide the batter evenly into 12 muffin cups, filling each about three-quarters full.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
The tops should look slightly golden and set.
Step 4: Cool and serve your sweet potato muffins

Let the muffins cool in the pan for about 5 minutes, then transfer them to a rack to cool completely.
Turning These Muffins into a Sweet Potato Loaf
If you don’t have a muffin pan, you can easily turn this recipe into a sweet potato loaf instead. It will be somewhat similar to my Date Sweetened Banana Bread recipe.
Simply pour the batter into a greased loaf pan and bake at 350°F for about 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
A sweet potato loaf has the same soft texture and warm flavor as the muffins, but it slices beautifully and works well as a breakfast bread.

Tips for the Best Sweet Potato Muffins
Make sure the sweet potato is well mashed so it blends smoothly into the batter.
Do not overmix the batter after adding the flour, or the muffins may turn out dense.
Roasted or baked sweet potato tends to have better flavor than boiled sweet potato for baking.
I used boiled in this recipe, but feel free to roast it.
If you like extra texture, adding chopped pecans or walnuts gives the muffins a nice crunch.
These sweet potato muffins are one of those recipes that feel simple but always turn out well.
They’re soft, lightly sweet, and full of so much flavor, making them perfect for breakfast, snacks, or whenever you’re craving something homemade.
