Is Jollof Rice Vegan?

Traditionally, Nigerian jollof rice is made with meat stock and sometimes cooked with fish, chicken, or goat on the side. But the beauty of this vegan jollof rice dish is that it’s incredibly adaptable.

By swapping in vegetable stock and keeping the base plant-based, you can enjoy the same flavors without compromising on taste.

In fact, this vegan Nigerian jollof rice is so flavorful that most people won’t even notice it’s vegan.

Ingredients for Vegan Jollof Rice

Long-grain parboiled rice: It’s perfect for holding its shape and not turning mushy. I highly recommend it over Jasmine or any other rice.

Red bell peppers: Sometimes I use chili peppers as well.

Tomatoes: Adds depth and acidity to balance the sweetness of the peppers.

Scotch bonnet (habanero): Brings the heat… use with caution, depending on your spice tolerance.

Onions: One blended with the base, one fried in oil to add flavor.

Tomato paste: This intensifies the tomato flavor and adds richness to the base.

Garlic and ginger: Both round out the flavors of the jollof stew. I like to blend it with the onions, peppers, and tomatoes.

Vegetable stock: Since this recipe is vegan, we will use vegetable stock instead of chicken or beef stock.

Bouillon cubes: Make sure you find vegetable bouillon cubes to keep it plant-based.

Bay leaves: They add background flavor. I recommend that you don’t skip it.

Thyme: A small but essential addition.

Curry powder: For warmth and spice balance.

Smoked paprika: Adds that smoky touch we all love in “party jollof.”

Neutral oil: For frying the base… I like to use avocado oil, and sometimes, I add butter as well. But sunflower, canola, or vegetable oil works well.

Salt and black pepper: To taste.

Optional veggies: Peas, carrots, or green beans for color and nutrition.

How To Make Vegan Jollof Rice

Step 1: Blend the pepper base

Add red bell peppers, tomatoes, scotch bonnet, garlic, ginger, and one onion to a food processor. Blend until slightly chunky.

Step 2: Fry the onions and tomato paste

In a large pot, heat oil over medium heat. Add the sliced onion and sauté until golden. Stir in the tomato paste and fry for 2–3 minutes until it darkens slightly.

Step 3: Cook the stew

cook the jollof stew

Pour in the blended pepper mix and let it cook for 15–20 minutes, stirring often. The stew should reduce slightly, and you’ll see the oil rise to the top.

Step 4: Season heavily

Crumble in bouillon cubes and stir in thyme, curry powder, smoked paprika, salt, and black pepper. Taste and adjust to your preference.

Step 5: Add the rice and stock

add the rice and vegetable stock

Stir the rinsed rice into the stew base, coating every grain. Pour in enough vegetable stock to just cover the rice. Add bay leaves, then cover tightly with foil or parchment and a lid to trap steam.

Step 6: Steam until tender

Reduce the heat to low and cook for 25–30 minutes. Avoid stirring too often… just let the rice absorb all that flavor.

Step 7: Fluff and finish

Once the rice is tender, fluff gently with a fork. Stir in optional veggies if using. For that smoky “party jollof” taste, let the bottom toast slightly before serving.

What to Serve With Vegan Jollof Rice

  • Fried plantains: Sweet and caramelized, the perfect sidekick.
  • Avocado slices: Creamy and cooling against the spice.
  • Cabbage salad: Crunchy and refreshing.
  • Grilled tofu or mushrooms: For extra plant-based protein.

What Makes Nigerian Jollof Rice Unique?

There are many versions of jollof rice across West Africa, but the Nigerian version is known for its smoky depth, bold spices, and vibrant red color. The rice cooks directly in the rich tomato-pepper sauce, which means every grain absorbs flavor.

That smoky taste you may have heard about (often called “party jollof”) comes from two things:

  1. The stew base being fried long enough until it’s deeply rich.
  2. The bottom layer of rice toasting slightly as it cooks.

Don’t skip either step if you want that actual Nigerian jollof experience.

Common Questions About Vegan Nigerian Jollof Rice

Can I make jollof rice without parboiled rice?

Yes, but I recommend parboiling because it holds up better during the long cooking process. If using regular long-grain rice, reduce the liquid slightly and keep a close eye on the texture.

Can I make it less spicy?

Absolutely. Just use half a scotch bonnet or swap it out for a milder chili.

Does vegan jollof rice taste the same as regular jollof?

Yes… It’s surprisingly close. The key flavors in jollof rice come from the stew base and spices, not the meat. The bouillon cubes and stock give it all the depth you need.

How do I store leftovers?

Jollof rice keeps well in the fridge for 4–5 days. It actually tastes even better the next day because the flavors have time to deepen.

I wanted to try out your other Nigerian jollof rice recipe, but I recently became vegan and wanted a vegan jollof rice. Found this post and made it last night. I am so happy! It tastes very similar to regular jollof which was surprising. I also added mushrooms as a side with stew. So tasty.
