What’s in this White Bean and Spinach Soup?
This soup leans into simple ingredients that make a big impact when layered together.
The beans give you protein, the aromatics bring out a deep flavor, and the spinach adds freshness.
Everything cooks down beautifully into a broth that tastes way richer than you’d ever expect from a quick, 30-minute dish.
Let’s dive deeper into the ingredients.
Ingredients for White Bean and Spinach Soup
Olive Oil: Helps soften the vegetables and build flavor at the start.
Onion: I used red onions.. But yellow works..

Garlic: Use fresh garlic. It gives the soup so much depth.
Carrots: A little sweetness and color to balance the broth.
Celery: For more flavor.
Cannellini Beans: I used canned cannellini beans for faster cooking.
Vegetable Broth: You can also use chicken or beef broth.
Baby Spinach: Wilts right into the soup for extra nutrients and color.
Seasonings: I used Italian seasoning, salt, maggi stock cubes, brown sugar, black pepper, and red pepper flakes.
Lemon Juice: Brightens the whole soup at the end.
Parmesan Rind (Optional): Adds a subtle richness while simmering.
How to Make White Bean and Spinach Soup
This soup comes together quickly, but layering each step makes a huge difference in the final flavor.
Step 1: Sauté the aromatics

Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until softened. The goal is to bring out their natural sweetness.
Stir in the garlic and Italian seasoning. Let everything cook for about a minute so the garlic becomes fragrant.
Step 2: Build the soup base

Add your cannellini beans and vegetable broth. If you’re using a Parmesan rind, now’s the time to drop it in.
Bring the soup to a gentle boil, then reduce the heat and let it simmer so the flavors can blend.
Step 3: Add the spinach and seasonings

Once the soup has simmered, stir in the spinach. It will wilt down almost instantly.
Add salt, pepper, and red pepper flakes if you like heat. Finish with lemon juice to brighten everything.
Remove the Parmesan rind before serving.

Expert Tips for Your Spinach and White Bean Soup
If you want even more creaminess, mash some of the beans before adding the spinach. This thickens the broth naturally.
For extra flavor, use a mix of spinach and kale. Kale holds up better if you’re planning to store leftovers.
If your soup tastes flat, a splash more lemon juice or an extra pinch of salt usually brings everything back to life.

How to Store Your White Bean and Spinach Soup
Store this soup in an airtight container in the refrigerator for up to 3 days.
The flavors get even better as it sits.
If the soup thickens too much, add a splash of broth or water when reheating.
