7 Easy Vegan Meals for One Person That Actually Taste Good

Tired of cooking too much? These easy vegan meals for one are quick, filling, and perfect for solo nights when you want something simple.

Looking for some easy vegan meals for one person? I got you.

When I first went vegan, I used to either cook way too much or not cook at all… there was no in-between.

And that’s because most vegan recipes online at that time didn’t help because they were clearly made for multiple people.

But as time went on and I started meal prepping for myself more, I learned how to simplify things.

I stopped trying to follow complicated recipes and started focusing on meals that are easy, filling, and don’t leave me stuck with a fridge full of leftovers I didn’t even want… especially when I’m not in the mood to meal prep.

So if you’ve been looking for vegan meals for one that actually feel realistic and doable, these single servings are the ones I keep coming back to.

1. Jackfruit Rice Bowl

This is one of those meals that feels like you ordered it… but you didn’t.

I sauté jackfruit with garlic, soy sauce, and a little smoked paprika until it’s slightly crispy.

Then I throw it over rice and add whatever I have in the fridge… cucumbers, shredded carrots, even avocado if I’m feeling fancy.

It’s simple, but it hits every time.

2. Vegan Jollof Rice

As an African, this is comfort food, no question.

I keep my single serve version pretty straightforward. Tomato base, blended peppers, spices, and rice all cooking together until everything is rich and delicious.

You also don’t need a huge pot or a complicated process. A smaller portion still gives you that same party jollof rice taste without the overload.

Plus if you want to add some protein to make it filling, my chili lime tofu or jerk oyster mushrooms are a great choice.

3. Sweet Potato and Mushrooms

I swear this combination never fails.

You cook the sweet potatoes with the mushrooms until they’re soft with a little crisp on the edges. .

When you mix them together, it’s that perfect combination of sweet and savory without doing too much. And when you pair it with any of these vegan side dishes, you’ve got a full meal to go!

4. Mushroom Quesadilla

This is my “I don’t feel like cooking but I still need to eat” meal.

Tortilla, mushrooms, vegan cheese… fold it, toast it, done.

It’s fast, it’s warm, and it actually feels like food instead of a random snack.

5. Black Bean and Cauliflower Rice Bowl

This bowl is fresh, filling, and comes together pretty quickly.

The cauliflower rice is cooked with simple spices until tender, then layered with warm black beans, cherry tomatoes, corn, red onion, avocado, and cilantro.

What really brings it together is the creamy avocado lime dressing.

It adds that smooth, tangy flavor that makes the whole bowl feel complete without being heavy.

6. Tofu and Sweet Potato Rice Bowl

This is one of those easy vegan meals for one person that you can throw together without much effort.

Just pair rice with crispy pan-fried tofu and roasted sweet potatoes, then add something fresh like spinach or cucumbers.

Finish it with a simple tahini drizzle, and you’ve got a filling bowl that works any day of the week.

7. Lentil Fried Rice

This is what I make when I have rice and no plan.

Throw it in a pan with lentils, veggies, and a nice sauce combo… and suddenly you’ve got a full meal in minutes.

It’s one meal that reminds you that cooking doesn’t have to be complicated to be good.

Vegan Meals For One: Tips for Cooking for One Person

Cooking for yourself gets a lot easier when you keep things simple… and that includes the tools you use.

You don’t need a full kitchen setup. A few basics will carry you through almost everything in this post.

A nonstick skillet is great for meals like the mushroom quesadilla or sautéed veggies. A small saucepan works perfectly for rice, pasta, or warming beans. And a sheet pan makes roasting sweet potatoes or vegetables really easy.

Keeping your equipment minimal also helps with cleanup, which honestly matters more than people think when you’re cooking for one.

It also helps to choose ingredients that work across multiple meals.

Rice, lentils, pasta, beans, and a few vegetables can be mixed and matched without needing a brand new recipe every time.

When it comes to portions, start small. It’s easier to make a little more if you need it than to deal with extra food you don’t want later.

And on days when you don’t feel like doing much, lean on the easiest option.

A quick bowl, a simple pasta, or something you can throw in one pan is more than enough. The goal is to make cooking feel manageable so you’ll actually stick with it.
