6 Low Effort Meal Prep Recipes That Make Eating Healthy Feel Effortless

Looking for low effort meal prep recipes that actually fit your life? These easy dishes make eating well feel simple, quick, and totally doable.

If eating healthy has ever felt like a full-time job… I feel you.

I used to think meal prep meant spending hours in the kitchen, cooking a bunch of complicated recipes I didn’t even feel like eating by midweek.

And honestly… that’s exactly why I kept falling off track.

What actually changed things for me was switching to low effort meal prep. Not the intense version… the realistic version.

The kind where you prep a few simple, good meals that you actually look forward to eating.

That’s what this post is all about.

These are 6 low effort meal prep recipes I keep coming back to… they’re simple, flexible, and make your week feel so much easier without overcomplicating anything.

I also included some plant based options for those living a vegan lifestyle.

What Is A Low Effort Meal Prep?

Low effort meal prep is all about doing the bare minimum… but in a smart way.

You’re not trying to cook everything. You’re just setting yourself up so future you doesn’t have to stress about food every day.

It saves time, energy, and honestly… mental space.

Research from the Harvard T.H. Chan School of Public Health shows that planning meals ahead can improve diet quality and help reduce impulsive food choices.

And that makes sense… because when something is already ready, you’re way more likely to eat it.

So instead of trying to be perfect… we’re just making things easier.

1. Orzo Parsley Salad

This is one of those lazy girl meals that just works for everything.

Lunch, dinner, side dish… even something you can snack on straight from the fridge when you don’t feel like cooking.

Orzo parsley salad is light but still filling, and it holds up really well in the fridge for a few days, which makes it perfect for low effort meal prep.

What I love about this one is how fresh it feels. It’s not heavy, it’s not complicated… and it pairs with literally anything.

If you’re someone who gets bored easily with meal prep, this is a good one to start with because you can easily switch it up by adding different proteins or toppings throughout the week.

It’s simple… but that’s exactly why it works.

2. Garlic Butter Shiitake and Oyster Mushrooms

If you want something that feels a little more “comfort food” but still super easy… this is it.

Garlic butter mushrooms are one of those meals that taste like you put in way more effort than you actually did.

They’re rich, delicious, and come together pretty quickly, which makes them perfect for busy weeks when you don’t want to think too hard about dinner.

This is also a really good soy free meat alternative if you’re trying to eat more plant-based meals without sacrificing flavor.

You can pair it with rice, add it to a bowl, or even use it as a side for something else you’ve prepped.

And honestly… it reheats really well, which is a huge win for low effort meal prep.

3. Quick Salmon and Cauliflower Rice Bowl

This one is for when you want something that feels balanced but still super easy to throw together.

A salmon and cauliflower rice bowl is one of my favorite low effort meal prep dishes because it’s simple, delicious, and doesn’t take much time to prep.

It’s the type of dish that makes you feel like you have your life together… even if everything else is chaotic.

You get protein, veggies, and something warm and satisfying all in one bowl.

And if you prep the components ahead of time, putting it together during the week takes like… five minutes.

This is a great dish for when you’re trying to incorporate more whole foods into your diet.

4. Roasted Broccoli and Chickpeas Salad

I love a good roasted veggie situation… and this one is so easy to prep in batches.

Roasted broccoli and chickpeas give you that perfect mix of crispy and soft, and when you turn it into a salad, it just feels like a complete meal without needing much else.

5. One-Pan Ground Sausage Dirty Rice

This is one of my favorite “low effort but still feels like a real meal” recipes.

Everything cooks in one pan, which already makes life easier… and the flavors are so good.

It’s delicious, filling, and perfect for days when you want something warm and satisfying without putting in a ton of effort.

The reason low effort meal prep works so well is because it doesn’t overwhelm you.
